Quick and Easy Rice Pudding recipe

Well…maybe not so quick, but this ricepudding is definitely easy and delicious!

Recipe: Quick and Easy RicePudding

3 cups cooked rice
3 cups 2% milk
1/2 cup granulated sugar
1/4 teaspoon salt (optional)
2 tablespoons butter or margarine
1 teaspoon vanilla extract

  • Combine rice, milk, sugar, salt and butterin saucepan. Cook over medium heat until thickened, 25 to 30minutes, stirring often. Add vanilla. Pour into serving dishes.Serve warm or cold.

    Makes 6 servings.

    I made this for my nine month old son who was not great at lumps. I had to blitz half of the recipe to make it less lumpy. Good taste and quite easy to make although the milk in the pan kept boiling over.
