Quesadilla Pizzas.

This easy Mexican-style pizza makes a greatappetizer for your next party or open a bag of Caesar salad mix,sit down and enjoy as a meal.

Recipe: Quesadilla Pizzas

8 (6-inch) fajita-size reduced-fat flourtortillas – divided use
1 cup (4 ounces) shredded reduced-fat cheddar cheese
1 tablespoon extra virgin olive oil
1/2 cup pizza sauce
1/2 teaspoon ground cumin
1/2 cup fat free refried beans, warmed
1/4 cup diced green chiles
2 green onions, thinly sliced
1/4 cup (1 ounce) shredded reduced-fat Monterey Jack cheese
1/4 cup sliced ripe olives

  • Preheat oven to 450°F (230°C).
  • Place 4 tortillas on baking sheet. Sprinklecheddar cheese evenly over tortillas; top with remaining tortillas.Brush lightly with oil.
  • Bake for 4 minutes. Combine pizza sauceand cumin in small bowl; spread on tortillas. Spoon beans evenlyover sauce mixture; sprinkle with chiles, green onions, MontereyJack cheese and olives.
  • Bake for 3 minutes or until cheese ismelted. Cut into wedges.

    Makes 4 servings.

    So i was wondering, is there a way to bake them to server multiples for larger groups or a party? i am making these for a semi small get together and feel that if i do this stove top, the first few ones will be cold by the time im finished.. any suggestions? With only one free night to cook between trips, these pepperoni pizza quesadillas were a stroke of genius. Only 48 hours at home meant very little time for cooking, but I couldn t very well let Chuy starve for his birthday – what kind of friend would I be?! Baking subtracted even more from the dinner preparation time, but what’s a birthday without dessert?
