Pumpkin Squares recipe

Pumpkin Squares.

A layer of sumptuous pumpkin filling isin between a buttery crust and nutty, sweet topping.

Recipe: Pumpkin Squares

1 cup all-purpose flour
1/2 cup quick-cooking oats
1/2 cup packed brown sugar
1/2 cup butter, softened

1 (15-ounce) can LIBBY’S® 100% Pure Pumpkin
1 (12-ounce) can NESTL ® CARNATION® EvaporatedMilk
3/4 cup granulated sugar
2 large eggs
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves

1/2 cup packed brown sugar
1/2 cup chopped pecans

  • Preheat oven to 350°F (175°C).
  • For Crust: Beat flour, oats, brown sugarand butter in a small mixer until crumbly. Press onto bottomon an ungreased 13 x 9-inch baking pan. Bake for 15 minutes.
  • For Filling: Beat pumpkin, evaporatedmilk, sugar, eggs, cinnamon, salt, ginger and cloves in a largemixer bowl. until smooth. Pour over crust. Bake for an additional20 minutes.
  • For Topping: Combine brown sugar and nutsin small bowl; sprinkle over filling. Bake for an additional15 to 25 minutes or until knife inserted in center comes outclean. Cool completely in pan on wire rack. Refrigerate untilready to serve. Garnish with whipped cream if desired.

    Makes 24 bars.

    I have made your pumpkin cake and cheesecake and it was a super hit! These bars look like just the thing for a casual get together . . .  .talking, munching, run after kids,  talking, munching, run after kids. . .  . No need for plates and forks girl! I love the addition of the pepitas . . great idea! I run for butter too, and I d definitely run 5 miles if it meant a plate of these bars were waiting for me. I ve been looking for a great pumpkin cream cheese bar recipes, this seems perfect! And the addition of pepitas? Brilliant.
