Pumpkin Perfect Oatmeal Cookies.

These pumpkin oatmeal cookies are chewyin texture, golden in color and easily made with a conveniencecookie mix, substituting the butter with pumpkin and a touchof oil. The pumpkin helps to reduce the fat and cholesterol inthis recipe. It also works to maintain the moistness, while creatingan attractive and deliciously sweet treat.

Recipe: ”Pumpkin Perfect”Oatmeal Cookies

1 (17.5-ounce) package oatmeal cookiemix1/2 cup LIBBY’S® 100% Pure Pumpkin3 tablespoons vegetable oil1 large egg1 cup sweetened dried cranberries, raisinsor nuts (optional)

  • Preheat oven to 375°F (190°C).
  • Combine cookie mix, pumpkin, oil and eggin large bowl. Stir in dried cranberries, if desired. Drop byrounded teaspoonfuls, about 2 inches apart, onto ungreased bakingsheets.
  • Bake for 10 to 12 minutes or until lightlybrowned and set in centers. Cool on baking sheets for 1 minute;remove to wire racks to cool completely. Store cookies in coveredcontainer.

    Makes 36 (3 dozen) cookies.
