Pumpkin Patch Cake recipe

This moist and flavorful, honey-sweetenedpumpkin spice cake is perfect for serving during fall and winterholidays.

Recipe: Pumpkin Patch Cake

1 cup honey
1 cup vegetable oil
1 (15-ounce) can pumpkin puree
1 cup ripe banana, mashed
4 large eggs
1 teaspoon vanilla extract
3 cups whole wheat flour
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
1 tablespoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 cup walnuts, coarsely chopped
1 cup seedless raisins

  • Preheat oven to 350°F ( 175°C).Grease and flour a 10-inch tube or Bundt pan.
  • In the bowl of an electric mixer, beattogether honey, oil, pumpkin, banana, eggs and vanilla untilsmooth.
  • In medium bowl, stir together flour, bakingpowder, baking soda, salt, and spices. Add to pumpkin mixture;mix untiil just combined. Fold in walnuts and raisins.
  • Pour batter into prepared baking pan.
  • Bake 50 to 60 minutes or until cake testsdone when wooden pick inserted in center comes out clean.

    Makes 12 servings.
