Pumpkin Orange Poppy Seed Cake.

Don’t wait for the holidays to indulgein this simple but elegant and delicious cake. Moist and withjust the right touch of citrus this pumpkin creation studdedwith poppy seeds is as pretty as it is tasty.

Recipe: Pumpkin Orange PoppySeed Cake

1 (18.25-ounce) package yellow cake mix
1 1/4 cups LIBBY’S® 100% Pure Pumpkin
3 large eggs
2/3 cup orange juice
1/4 cup poppy seeds
Glaze, recipe follows

  • Preheat oven to 350°F (175°C).Grease and flour 12-cup Bundt pan.
  • Combine cake mix, pumpkin, eggs and orangejuice in large mixer bowl. Beat on low speed until moistened.Beat on medium speed for 2 minutes. Add poppy seeds; mix untilblended. Pour into prepared Bundt pan.
  • Bake for 35 to 40 minutes or until woodenpick inserted in cake comes out clean. Cool in pan on wire rackfor 10 minutes; remove to wire rack to cool completely. Drizzlewith Glaze.
  • For Glaze: Combine 1 1/2 cups sifted powderedsugar and 2 to 3 tablespoons orange juice in small bowl; stiruntil smooth.
