Pumpkin Orange Cookies recipe

Pumpkin Orange Cookies.

These moist, pumpkin-flavored cookies aredrizzled with an orange glaze for a tasty finishing touch.

Recipe: Pumpkin Orange Cookies

2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup butter or margarine, softened
1 cup granulated sugar
1/2 cup packed brown sugar
1 large egg
1 (15-ounce) can or 1 3/4 cups LIBBY’S® 100% Pure Pumpkin
2 tablespoons orange juice
1 teaspoon grated orange peel
1/2 cup chopped nuts, (optional)
Orange Glaze, recipe follows

  • Preheat oven to 375°F (190°C).
  • Combine flour, baking soda and salt inmedium bowl. Combine butter, granulated sugar and brown sugarin large mixer bowl; beat until creamy. Add egg, pumpkin, orangejuice and orange peel; beat until combined. Gradually add flourmixture; beat until combined. Stir in nuts. Drop dough by roundedteaspoon onto ungreased baking sheets.
  • Bake for 12 to 14 minutes or until edgesare set. Remove to wire racks to cool completely. Spread eachcookie with about 1/2 teaspoon Orange Glaze.

    Makes 4 dozen.

    For Orange Glaze: Combine 1 1/2 cups siftedpowdered sugar, 2 to 3 tablespoons orange juice and 1/2 teaspoongrated orange peel in medium bowl until smooth.

    Recipe

    In a large mixing bowl, cream butter and sugar until light and fluffy. Beat in vanilla, egg and pumpkin. Sift together the flour, baking powder, baking soda, salt and cinnamon; stir into mixture until well blended. Cut the cranberries in half and stir into mixture along with the orange zest and walnuts. Drop by teaspoonfuls onto cookie sheets.
