This is a wonderful, nutty-flavored yeastbread that makes a scrumptious sandwich when combined with left-overThanksgiving turkey breast, cranberry sauce, dressing and lettuce,or a lively turkey salad even. A recipe for bread machines.
Recipe: Pumpkin Nut Bread
3/4 cup pumpkin, canned
1/3 cup milk
1 large egg
1 tablespoon butter, softened
2 1/3 cups white bread flour
1/2 cup chopped pecans, toasted*
3 tablespoons brown sugar, packed1 teaspoon salt
1 teaspoon pumpkin pie spice
2 teaspoons active dry yeast
Makes one (1 1/2 pound) loaf.
*To toast pecans, place in a shallow bakingpan. Bake at 350°F (175°C) for 15 to 20 minutes or untilpecans are lightly browned, stirring occasionally. Cool.
