Pumpkin Cranberry Cookies.

Recipe: Pumpkin CranberryCookies

2 cups all-purpose flour1 teaspoon ground cinnamon1 teaspoon baking powder1/2 teaspoon baking soda1/2 teaspoon ground nutmeg1 cup granulated sugar3/4 cup (1 1/2 sticks) butter or margarine,softened1 large egg1 cup LIBBY’S® 100% Pure Pumpkin1 teaspoon vanilla extract1 1/2 cups OCEAN SPRAY® Fresh or FrozenCranberries, chopped3/4 cup chopped walnuts

  • Preheat oven to 350°F (175°C).
  • Combine flour, cinnamon, baking powder,baking soda and nutmeg in medium bowl. Beat sugar and butterin large mixer bowl until light and fluffy. Add egg; beat well.Add pumpkin and vanilla extract; beat well. Gradually beat inflour mixture, mixing just until moist. Stir in cranberries andnuts. Drop by rounded teaspoonfuls onto ungreased baking sheets.
  • Bake for 20 minutes or until golden brown.Let stand for 2 minutes; remove to wire racks to cool completely.

    Makes 36 (3 dozen) cookies.
