Pumpkin Bars with Cream Cheese Frosting recipe

Recipe: Pumpkin Bars withCream Cheese Frosting

Pumpkin Bars:2 cups all purpose flour
1 teaspoon ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
2 cups granulated sugar
3 large eggs, beaten
1 cup vegetable oil
1 cup canned pumpkin
1 cup walnuts, choppedCream Cheese Frosting:2 (3-ounce each) packages cream cheese,softened
3 cups powdered sugar
6 tablespoons butter or margarine, softened
1 teaspoon vanilla extract

  • For Pumpkin Bars: Combine flour, cinnamon,baking soda, salt and sugar. Stir in beaten eggs, oil, and cannedpumpkin until thoroughly combined. Stir in chopped walnuts. Spreadbatter into an ungreased 15 x 10 x 1-inch baking pan.
  • Bake in a 325°F (160°C) oven for30 minutes. Cool and frost with Cream Cheese Frosting, if desired.Cut into bars.
  • For Cream Cheese Frosting: Combine frostingingredients in a small bowl; mix until well blended.

    Makes 48 bars.

    I made the Pumpkin Bars tonight and will use your cream and marshmallow fluff recipe. I ve had a jar of fluff that I wanted to use. It sounds yummy. can these be made without the cream cheese frosting? I am diabetic and try to stay away from sugary frostings if at all possible. these sound so delicious. I love pumpkin anything
