Pumpkin and White Chocolate Cheese Pie recipe

This cheesecake-like pumpkin pie, lacedwith Gran Marnier and studded with white chocolate chips in acinnamon-scented graham cracker crust is nothing less than holidayperfect.

Recipe: Pumpkin and WhiteChocolate Cheese Pie

1 1/2 cups fine graham cracker crumbs1/3 cup granulated sugar6 tablespoons butter, melted1/2 teaspoon ground cinnamon1 (8-ounce) package cream cheese, softened1 cup ricotta cheese1/2 cup sour cream1/2 cup pumpkin puree2 large eggs1/4 cup butter, melted2 tablespoons Grand Marnier liqueur1/8 teaspoon nutmeg3/4 cup granulated sugar1 1/2 tablespoon all-purpose flour1 1/2 tablespoon cornstarch1/2 cup white chocolate chips

  • Preheat oven to 350°F (175°C).
  • Mix graham cracker crumbs, sugar, meltedbutter and cinnamon until well blended. Press mixture into a9-inch deep dish pie plate. Set aside.
  • In a large glass bowl, beat together creamcheese, ricotta cheese, sour cream, pumpkin puree, eggs, butter,Grand Marnier and nutmeg, using an electric mixer.
  • In a separate bowl, mix together the sugar,flour and cornstarch. Slowly add dry ingredients to the cheesemixture, mixing well. Gently pour into the unbaked graham crackercrust and sprinkle the white chocolate chips evenly over thetop.
  • Bake for 1 hour. Turn off the heat andleave in oven for an additional 2 hours. Remove from the ovenand let cool on a wire rack. Chill before serving.

    Makes 8 servings.

    I made this for thanksgiving dinner and it was a big hit! Awesome recipe and way easier than it looks once you get the hang of melting the white chocolate- I made the mistake of trying the microwave method and it turned super grainy, definitely worth the time to use a double boiler!
