Puffy Pumpkin Pancakes.

These easy to make pumpkin pancakes arebeautifully golden in color and have a fun “puffed-up”appearance. With the pumpkin adding a hint of flavor and moistness,pumpkin adds just the right touch to make these pancakes a newfamily favorite.

Recipe: Puffy Pumpkin Pancakes

2 cups complete pancake mix (such as AUNTJEMIMA® Buttermilk Complete)
1 1/2 cups water
2/3 cup LIBBY’S® 100% Pure Pumpkin
Nonstick cooking spray
Lite pancake syrup, if desired

  • Combine pancake mix, water and pumpkinin medium bowl. Stir just until moistened. Batter may be lumpy.
  • Heat griddle or large skillet over mediumheat; spray with nonstick spray. Pour 1/4 cup batter onto hotgriddle; cook until batter bubbles begin to burst. Turn and continuecooking for 1 to 2 minutes or until golden. Repeat with remainingbatter. Serve with syrup.

    I seriously love all your pumpkin recipes. I need to try those pancakes, and the one pot pasta and your pumpkin spice latte and Guess I m off to buy a gazillion of pumpkins! these smell just wonderful and taste great. have you ever tried separating the eggs, whipping the whites to peaks then folding them in last?? that works great for normal pancakes. bet it would with these too. thanks for the lovely recipes.


    I ve been using the recipe for fluffy pancakes from Hell Yeah Its Vegan for 3 years and they were good, I didn t like having to buy spectrum shortening all the time, but they were okay. Is it april fools already?
