Potato Chip Cookies recipe

Is it so incredible that potato chips canactually make a good cookie…when you know you love to eat ’emone right after another? Go ahead…give these cookies a try!You won’t be disappointed.

Recipe: Potato Chip Cookies

1 cup vegetable shortening
1 cup granulated sugar
1 cup firmly packed brown sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 cup crushed potato chips

  • Preheat oven to 350°F (175°C).
  • Cream shortening, sugar and brown sugartogether until light and fluffy. Add eggs and vanilla, mixingwell. Stir in flour, then fold in potatochips.
  • Drop by tablespoonfuls about 2-inchesapart onto a lightly greased or nonstick baking sheet. Make acriss-cross pattern with the tines of a fork on top of each cookie.
  • Bake for about 12 minutes or until lightgolden brown. Transfer cookies to wire rack and cool completely.Store in airtight container.

    Makes about 5 dozen.
