These cookies won’t seem so ‘junk-food’after the first bite.
Recipe: Potato Chip Cookies
1 cup butter1/2 cup granulated sugar1 large egg yolk1 teaspoon vanilla extract1 1/2 cups all-purpose flour1 cup finely chopped pecans2/3 cup crushed potato chips
Preheat oven to 350°F (175°C).
Cream butter and sugar until light andfluffy; mix in egg yolk and vanilla. Stir in flour until blended.Fold in nuts and potato chips.
Drop by tablespoonfuls onto a lightlygreased or nonstick baking sheet and crisscross the top of eachwith the tines of a fork.
Bake for about 12 minutes or until lightgolden brown. Transfer cookies to wire rack to cool completely.Store in an airtight container.
Makes 2 dozen.
