Potato Chip Cookies recipe

These cookies are incredibly crispy anddelicious…and unless you reveal it, no one will ever neverguess the secret ingredient is crushed potato chips!

Recipe: Potato Chip Cookies

1 cup butter or margarine, softened
1 cup sifted powdered sugar2 large egg yolks
1 teaspoon vanilla extract
1 1/2 cup all purpose flour
3/4 cup crushed potato chips
1/2 cup finely chopped pecans

  • Preheat oven to 350°F (175°C).
  • Cream butter and powdered sugar untillight and fluffy; add egg yolks and vanilla beating until wellmixed. Stir in flour until blended. Foldin potato chips and pecans.
  • Drop by tablespoonfuls onto a lightlygreased or nonstick baking sheet and crisscross the top of eachwith the tines of a fork.
  • Bake for about 12 minutes or until lightgolden brown. Transfer cookies to wire rack to cool completely.Store in an airtight container.

    Makes about 3 dozen.
