Potato Breakfast Casserole recipe

Breakfast casseroles are exceptionallyeasy entrees for breakfast and brunch get-togethers.

Recipe: Potato BreakfastCasserole

3 cups frozen hash brown potatoes (dicedor shredded)1/3 cup chopped green onions1/4 cup chopped green or red bellpepper8 slices smoked bacon, cooked and crumbled2 cups shredded cheddar cheese3/4 cup milk1 (8-ounce) can cream-style corn6 large eggs, beaten1 teaspoon saltFreshly ground pepper to taste

  • Heat oven to 350°F (175°C).
  • Spread potatoes in greased 13 x 9 x 2-inchbaking pan. Top with green onion, bellpepper, bacon, and cheese.
  • Mix togetherthe milk, cream-style corn, eggs, salt and pepper. Pour over potato/cheese mixture.
  • Bake 35 to 40 minutes or until knife insertedin center comes out clean.

    Makes 6 to 8 servings.
