Pork Fajitas recipe

Simple fajitas for a weekday meal. Easierstill if you have time to cut everything the night before. Servewith Spanish rice and fresh fruit.

Recipe: Pork Fajitas

1 pound boneless pork chops, cut intostir-fry strips
1 teaspoon vegetable oil
1 medium red onion, thinly sliced
1 medium green bell pepper, cut into thin strips
1/2 cup chunky salsa
2 tablespoons fresh lime juice
8 (8-inch) flour tortillas

  • Heat oil in nonstick skillet over medium-highheat. Add pork strips, onion and bell pepper; cook for 2 to 3minutes or until cooked through.
  • Add salsa and lime juice to skillet. Cookand stir until meat and vegetables are coated. Reduce heat tolow; cover and cook for 3 to 5 minutes.
  • Spoon about 1/2 cup pork mixture on eachtortilla. Fold tortilla around meat mixture.

    Serves 4.
