Pork Burros recipe

leftover pork roast gets transformed intoa tailgating treat. Simple to put together at the event justbefore eating. Or simply make a buffet for your guests to maketheir own. Serve as part of a tailgating/Superbowl buffet withdifferent salsas, dips and your favorite chili or soup.

Recipe: Pork Burros

3 cups shredded or finely chopped roastpork
1 cup chopped onion
1 clove garlic, minced
1 to 3 tablespoons diced jalapeno pepper *
12 flour tortillas, warmed
3 cups shredded lettuce
2 cups diced tomatoes
3/4 cup shredded cheddar cheese
Salsa, as desired

  • In a nonstick skillet, sweat onion andgarlic over medium heat for 5 minutes, until soft and translucent.
  • Add cooked pork; toss lightly. Heat thoroughly.Stir in jalapeno pepper.
  • In each tortilla roll up 1/4 cup shreddedpork mixture, a portion of the lettuce, tomatoes, 1 tablespooncheese and top with salsa, if desired.

    Serves 12.

    * Use rubber gloves when handling hot peppers.
