Plum Duff with Rum Sauce recipe

Plum duff, also known as plum pudding,is a steamed pudding traditionally served on Christmas day inEngland.

Recipe: Plum Duff with RumSauce

2 large eggs1/2 cup melted vegetable shortening1 cup firmly packed brown sugar2 cups cooked prunes1 cup all-purpose flour1 teaspoon baking soda2 tablespoons cold milkRum Sauce:1 cup granulated sugar3 tablespoons all-purpose flour1/4 teaspoon salt2 cups water1/4 cup butter1 tablespoon vanilla extract2 tablespoons rum

  • Beat eggs well.
  • Dissolve brown sugar in hot, meltedshortening and add to eggs.
  • Add cooked prunes that have beendrained and mashed with fork.
  • Sift flour and add. Dissolve soda in milk and add last.
  • Fill greased pudding molds 2/3full, cover lightly and steam one hour overrack in large cooking pot.
  • Serve hot with Rum Sauce or whipped cream.
  • For Rum Sauce: In small saucepan combinesugar, flour and salt; slowly stir in waterand bring to a boil. Cook for 5 minutes.
  • Remove from heat and add remaining sauceingredients, mixing well. Serve warm.

    Makes 6 to 8 servings.
