Pistachio Peppercorn Feta Crostini.

Crumbled feta cheese mixed with crackedpeppercorns, cream cheese and crunchy pistachios make a delicoustopping for crisp crostini. A simple appetizer that is sure toplease your party guests.

Recipe: Pistachio PeppercornFeta Crostini

1 cup (6 ounces) crumbled feta cheesewith peppercorns (or 1 cup regular feta cheese mixed with 1 teaspooncracked peppercorns)
1 (8-ounce) package cream cheese, softened
1/3 cup chopped pistachio nuts
1 loaf French bread (12 inches long), cut in 1/2-inch slices
1/3 cup extra-virgin olive oil

  • Preheat the broiler.
  • Combine cheeses and nuts; mix well. Setaside.
  • Brush both sides of the bread slices witholive oil, and place the bread on the broiling rack.
  • Broil the bread slices, at least 4 inchesbelow the heating element, until lightly browned on both sides,turning once.
  • Spread each slice with the cheese mixture.

    Makes 24 servings.

    What s great about this recipe is not only the combo of sweet peach and balsamic reduction with tangy-sweet honey feta, but also the combo of textures. Crunchy crostini, creamy cheese, and juicy peach. So. Much. Win. Enjoy! What is that? The most attractive food photo ever? I m not sure how you have time to cook amazing meals, photograph them to perfection and then blog about them with a baby, but I m pretty amazed by your ability to do all of it. These sound incredible and are so damn pretty to look at! Plus, I like the idea of eating party food even without other people around.
