Pistachio Nut Bread.

Little powerhouses of vitamins and antioxidants,pistachios are a festive, flavorful and a fantastic “green”addition to this tasty, low-fat quick bread.

Recipe: Pistachio Nut Bread

1 cup all purpose flour, unbleached, sifted1 teaspoon baking soda1 teaspoon salt1/8 cup sliced almonds, chopped1/4 cup shelled pistachios, chopped1/8 cup raw sunflower seeds, shelled1/4 cup nonfat dry milk powder1 cup whole wheat flour1/2 cup seedless raisins1 tablespoon grated orange peel1 medium egg, beaten1 cup low-fat buttermilk2 tablespoons walnut oilCooking spray

  • Preheat oven to 375°F (190°C).Spray two small loaf pans with cooking spray.
  • Mix together the flour, baking soda, salt,nuts, dry milk, whole wheat flour, raisins and orange zest ina bowl.
  • In a separate bowl, mix together the egg,buttermilk and walnut oil. Combine with the flour mixture.
  • Transfer the batter into loaf pans andbake for 50 minutes.

    Makes 12 servings.

    This Pistachio Pudding Bread is made from a cake mix and pudding mix. You’ll love the cinnamon sugar swirl in the middle and the cinnamon sugar topping. Alright, I told you that it took under 15 minutes to get this into the oven, but the part that is always hardest is waiting the 40-50 minutes while the bread bakes in the oven. And the aroma that you get when this bread is baking?
