Pineapple-Topped Creamy Rice Pudding recipe

Creamy rice pudding topped with a pineapplesauce sweetened with brown sugar.

Recipe: Pineapple-ToppedCreamy Rice Pudding

3 cups cooked rice
4 cups milk – divided use
2/3 cup granulated sugar
3/4 teaspoon salt
2 large eggs
1 (3-ounce) package cream cheese, softened
1 teaspoon vanilla extractPineapple Sauce:1 (20-ounce) can pineapple chunks
1 tablespoon cornstarch
1 tablespoon butter or margarine
1/4 cup firmly packed brown sugar
1/8 teaspoon salt
1/2 teaspoon vanilla extract

  • Combine rice, 3 1/2 cups milk, sugar andsalt in 2-quart saucepan. Cook over medium heat, stirring occasionally,until thick and creamy, about 15 minutes.
  • Beat remaining 1/2 cup milk, eggs andcheese together. Stir into rice mixture. Cook 2 minutes longer,stirring constantly. Add vanilla.
  • Turn into serving dishes. Serve warm orchilled with Pineapple Sauce.
  • For Pineapple Sauce: Combine pineapplewith juice and cornstarch in 1-quart saucepan. Stir to dissolvecornstarch. Add butter, brown sugar and salt. Cook, stirring,until clear and thickened. Add vanilla.

    Makes 6 servings.
