Recipe: Pineapple-OrangeSunshine Cake

Cake:1 (18.25-ounce) package reduced-fat yellowcake mix3/4 cup applesauce4 large eggs (or 7 large egg whites)1 (11-ounce) can Mandarin oranges in lightsyrupFrosting:1 (8-ounce) container light whipped topping,thawed1 (3.4-ounce) instant vanilla puddingmix1 (15 1/2-ounce) can crushed pineapplein juice

  • For Cake: Preheat oven to 350°F (175°C).Coat a 9 x 13 x 2-inch baking pan withnon-stick spray. Set aside.
  • In a large bowl, stir together all cakeingredients until moist. Beat by handfor 2 minutes. Pour batter into pan.
  • Bake 30 to 40 minutes or until a woodenpick inserted in the center comes outclean. Cool completely.
  • For Frosting: In a large bowl, mix togetherall ingredients until well blended.Spread over cake. Store in refrigerator.

    Makes 12 servings.

    Note:To make a multi-layer cake, bake thebatter in two 9-inch cake pans forabout 25 minutes or until it tests done. Splitcooled layers in half horizontally, spread with frostingand stack.

    I am thrilled to hear that all of you have enjoyed it so much, Susan! This cake continues to be a favorite no matter where I take it and I m so glad you love it, too! Oranges would definitely be good here, too! Do you have to use a box cake mix? Could I use a recipe for yellow cake and just add the pineapple? I have fresh pineapple I need to use up so I was just going to throw it in the food processor to crush.
