Pineapple Corn and Green Chile Relish recipe

Dress up your favorite poultry or seafooddishes. This tangy relish goes great spooned over grilled orbroiled chicken and turns plain steamed fish into a simple yetelegant entr e.

Recipe: Pineapple Corn andGreen Chile Relish

1 1/2 cups frozen corn, thawed
1 (8-ounce) can crushed pineapple, drained
1 (4-ounce) can diced green chiles
1/4 cup diced red onion
1/4 cup diced red bell pepper
1 tablespoon chopped fresh cilantro
1/8 teaspoon cayenne pepper

  • Combine corn, pineapple, chiles, onion,bell pepper, cilantro and cayenne pepper in medium bowl. Letstand for 20 minutes for flavors to blend.

    Makes 3 cups.
