Pineapple Banana Fritters recipe

Enjoy these crispy, powder sugar-coated,tropical treats while still warm with freshly brewed coffee.

Recipe: Pineapple BananaFritters

1 1/3 cups all-purpose flour1 1/2 teaspoons baking powder3 tablespoons granulated sugar1 teaspoon ground ginger1/2 teaspoon salt3/4 cup crushed pineapple, drained3/4 cup chopped banana1/2 cup milk1 large egg, beaten lightlyVegetable oil for deep-fryingPowdered sugar for dusting

  • In a small bowl sift together flour, bakingpowder, sugar, ginger, and salt.
  • In a bowl combine pineapple, banana, milk,and egg; mixing well. Add the flourmixture; stir batter until just combined.
  • In Dutch oven or deep fryer, heat 1 1/2-inchesof oil to 375°F (190°C).
  • Drop batter by tablespoonfuls into hotoil in batches, and fry fritters, turning,for 1 to 1 1/2 minutes, or until they are golden. Transfer fritterswith slotted spoon to paper towels to drain.Sift powdered sugar over fritters.

    Makes about 20 fritters.

    Combine milk and Greek yogurt and stir to combine. Add eggs, stir again until well combined. Place diced banana in a measuring cup or bowl. Add enough diced pineapple to make 1? cup of fruit.
