Pig Pick’n Cake recipe

A southern favorite, Pig Pick ‘n Cake isa three layer mandarin orange cake filled and frosted with fluffyvanilla pineapple cream frosting.

Recipe: Pig Pick’n Cake

1 (18.25 ounce) package yellow cake mix1 (11-ounce) can mandarin oranges withjuice4 large eggs1/4 cup vegetable oil1 (16-ounce) container nondairy whippedtopping1 (16-ounce) can crushed pineapple, drained1 (4-ounce) package instant vanilla pudding

  • Preheat oven to 350°F (175°C).Grease and flour 3 (8-inch) cake pans; setaside.
  • Combine in mixing bowl cake mix, orangeswith juice, eggs, and oil. Beat withelectric mixer for 2 minutes. Pour batter into prepared cakepans.
  • Bake for 25 to 30 minutes, or until caketests done. Cool layers on wire racks.
  • Combine whipped topping, drained pineappleand instant pudding mix. Fill and frostcooled cake. Refrigerate until ready to eat.

    Makes 12 servings.

    This is my daughters favorite. It is an easy mandarin orange cake with pineapple, nuts, pudding and whipped topping. Whip one up and it s pig-out time!
