Picadillo Empanaditas recipe

Picadillo Empanaditos.

These delicious miniature spiced-groundbeef turnovers are bursting with flavor, and are sure to be ahit at your next party or get-together.

Recipe: Picadillo Empanaditas

Filling:2 tablespoons vegetable oil1 1/4 cups finely chopped onion2 cloves garlic, finely chopped1 jalapeño, seeded and finely chopped1 tablespoon chili powder2 teaspoons ground cumin1 teaspoon dried oregano1/4 teaspoon ground cinnamon1/8 teaspoon ground cloves1 pound lean ground beef2 tablespoons MAGGI Granulated Beef RibsFlavor Bouillon1 (14.5-ounce) can diced tomatoes in juice,undrained2/3 cup chopped pimiento-stuffed greenolives1/2 cup currants1/2 cup water1/3 cup pine nuts (optional)2 tablespoons packed dark brown sugar2 tablespoons tomato pastePastry:4 1/2 cups all-purpose flour1 tablespoon baking powder1 teaspoon salt1 cup vegetable shortening, melted1 cup warm milk1 large egg, beaten1 large egg yolk, beatenVegetable oil for frying

  • For Filling: Heat oil in large skilletover medium-high heat. Add onion, garlic, jalapeño, chilipowder, cumin, oregano, cinnamon and cloves. Cook, stirring frequently,for 5 to 6 minutes or until onion has softened. Add beef andbouillon; cook, stirring occasionally, for 8 minutes or untilbeef is no longer pink. Add tomatoes with juice, olives, currants,water, nuts, sugar and tomato paste. Cook, stirring occasionally,for 5 minutes or until mixture is heated through and has thickenedslightly.
  • For Pastry: Combine flour, baking powderand salt in large bowl. Add shortening, milk, egg and egg yolk.Stir with a fork until dough forms a ball. Divide dough into40 pieces and roll into balls. Roll each ball on a floured surfaceto a 5-inch circle. Keep dough balls covered as you work.
  • Heat oil in large saucepan for frying.
  • To Assemble: Place 1 heaping tablespoonfilling in center of each circle. Wet edges with water and foldin half; seal edges by pinching together or crimping with fork.Fry a few empanaditas at a time until golden brown or place onbaking sheets and bake in preheated 400ºF (205ºC) ovenfor 15 to 17 minutes or until golden brown. Serve warm.

    Makes 40 appetizer servings.

    Tip: Make larger “empanadas”to serve as a main dish.
