Penne with Tomatoes and Fresh Mozzarella recipe

The classic Italian dish, pasta caprese,is a deliciously simple dish of coarsely chopped plum tomatoes,fresh mozzarella, olive oil, red wine vinegar and fresh basiltossed with penne.

Recipe: Penne with Tomatoesand Fresh Mozzarella

1 1/2 pounds plum tomatoes, seeded, coarselychopped8 ounces fresh mozzarella cheese,cut into 1×1/2-inch strips1/4 cup extra-virgin olive oil1 tablespoon red wine vinegarSalt and freshly ground black pepper totaste1/2 cup chopped fresh basil12 ounces penne pasta, cooked accordingto package directions

  • Mix tomatoes, mozzarella, oil and vinegarin medium bowl. Season with salt andpepper. Let stand 1 hour at room temperature.
  • Mix in basil. Addhot cooked pasta to tomato mixture and toss gently to blend.
  • Season with salt and pepper and serve.

    Makes 4 Servings.
