Pecan Pralines recipe

Chewy, brown sugary sweet pecan pralines.

Recipe: Pecan Pralines

3/4 cup butter
1 cup granulated sugar
1 cup packed brown sugar
1/2 cup heavy cream
1 cup milk
1 cup chopped pecans
2 cups pecan halves
2 tablespoons vanilla extract

  • Melt butter in a heavy saucepan over highheat. Add sugar, brown sugar, and cream. Cook for 1 minute, stirringconstantly. Add milk and chopped pecans; cook for 4 minutes more,stirring constantly. Reduce the heat to medium and continue cookingand stirring for 5 minutes. Add pecan halves and vanilla andcontinue cooking until done, about 15 to 20 minutes, or 240°F(115°C) on a candy thermometer.
  • Drop the batter onto a baking sheet bytablespoonfuls, about 2-inches in diameter. Cool.

    Makes 32 pieces.
