A cookie bar for pecan pie lovers!
Recipe: Pecan Pie Squares
2 cups all-purpose flour, sifted
Preheat oven to 350°F (175°C).Grease a 9 x 13-inch baking pan; set aside.
In a large mixing bowl, combine flour,1/2 cup of the sugar, salt and 8 tablespoons (1/2 cup) of thebutter. Mix on medium speed with an electric mixer until it resemblescoarse meal. Press crust firmly into the bottom of baking pan.Bake for 20 minutes, or until golden brown.
In a bowl, combine eggs, remaining 1 cupsugar, corn syrup, remaining 2 tablespoons butter and pecans.Mix well and pour over crust. Bake an additional 20 to 25 minutes,or until filling is set. Cool before cutting into squares.
1 1/2 cups granulated sugar – divided use
1/2 teaspoon salt
10 tablespoons butter, melted – divided use
3 large eggs, beaten
1 cup light corn syrup
2 cups chopped pecans
Makes 24 squares.
