Pecan Nougat Oatmeal Bars recipe

Pecan Nougat Oatmeal Bars.

Oatmeal cookie bars topped with a chewynougat with pecans.

Recipe: Pecan Nougat OatmealBars

1/2 cup butter, softened
1/2 cup firmly packed brown sugar
1/4 cup granulated sugar
2 large eggs, separated
2 tablespoons water
1/2 teaspoon vanilla extract
2 cups Quaker® Oats (quick or old fashioned, uncooked)
1/2 cup all-purpose flour
1/2 teaspoon baking soda
1/2 cup firmly packed brown sugar
3/4 cup chopped, lightly toasted pecans

  • Heat oven to 350ºF (175ºC).Grease a 13 x 9 x 2-inch baking pan.
  • In large bowl, beat butter, 1/2 cup brownsugar and the granulated sugar with electric mixer until creamy.Add egg yolks, water and vanilla; beat well. Add combined oats,flour and baking soda; mix well. Spread dough evenly in bottomof pan. Bake 15 minutes or until deep golden brown. Remove fromoven to cooling rack.
  • Reduce oven temperature to 325ºF(160ºC).
  • In medium bowl, beat egg whites with electricmixer until foamy. Gradually add the remaining 1/2 cup brownsugar, beating until stiff peaks form. Spread over warm crustto edges of pan. Sprinkle pecans evenly over top.
  • Bake 20 minutes or until topping is lightlybrowned.
  • Cool 10 minutes. Cut into bars but donot remove from pan. Cool completely in pan.
  • Remove cooled bars from pan. Store tightlycovered, separating layers with waxed paper.

    Makes 24 bars.

    These have lasted up to 2 weeks for me in the fridge in a sealed container, individually wrapped. I ve also made them with cherries, plums, and this newest batch is blueberries. Very versatile recipe. I love it! It s a great way to get oatmeal into my diet without having to eat it all gloppy and hot. I ve been waiting for you to post more vegan ideas! Also, is it just me or is the baking time missing?? You have 350F, but never say anything about how long, just to cook on the stove for 6-7 minutes.
