Easiest ‘caramel’ pecan log roll ever!

Recipe: Pecan Log Roll

1 (6-ounce) package butterscotch flavoredchips1/3 cup sweetened condensed milk1/2 teaspoon vanilla extract
1/2 cup chopped pecans
1 large fresh egg white*, slightly beaten (seeFood Safety)Additional chopped pecans

  • Melt morsels in double boiler over simmeringwater. Remove from heat.
  • Stir in sweetened condensed milk, vanillaand pecans. Chill until firm enough to handle.
  • Roll tightly on waxed paper to form a12-inch roll.
  • Brush with egg whites; roll in additionalchopped pecans. Wrap tightly in plastic wrap or waxed paper andchill until firm. Slice to serve.

    Makes about 3/4 pound candy.

    *We highly recommend the use of pastuerizedegg whites in foods that are not cooked.
