Recipe: Pecan Ball Cookies

1 cup butter, softened
2/3 cup powdered sugar
2 cups all-purpose flour, sifted
1 1/4 cup chopped pecans
1 tablespoon rum
1 teaspoon vanilla extract
Additional powdered sugar for rolling

  • Cream butter and sugar. Add remainingingredients in order given and chill 1/2 hour.
  • Form dough into 1-inch balls and place1 1/2-inches apart on cookie sheet.
  • Bake in 325°F (160°C) oven for25 to 30 minutes or until light golden brown. Cool completelyand roll in powdered sugar, if desired.

    Makes 2 dozen.

    The pecan balls were fantastic! Soft, melt-in-your-mouth, nutty flavor. The only change I made was, chopped the pecans finely used only 1 cup of pecans. I was wondering. Would it be possible to add Christmas decorating sugar to the powdered sugar before you roll them the second time? Would that be pretty? Would it work?


    These are my favorite cookies I love to make these cause they’re so quick and easy to make and oh so good. !!!!!!!!!!
