Pecan Autumn Cheesecake recipe

Luscious vanilla cheesecake in a grahamcracker crust topped with cinnamon-sugared apple slices.

Recipe: Pecan Autumn Cheesecake

1 cup graham cracker crumbs
3 tablespoons granulated sugar
1/2 teaspoon ground cinnamon
1/2 cup finely chopped pecans
1/4 cup butter or margarine, melted
2 (8-ounce) packages cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1/2 teaspoon vanilla extract
4 cups thinly sliced apples
1/3 cup granulated sugar
1/2 teaspoon ground cinnamon
1/4 cup pecans, chopped

  • Combine graham cracker crumbs, 3 tablespoonssugar, 1/2 teaspoon cinnamon, finely chopped pecans, and meltedbutter; press onto the bottom of a 9-inch springform pan. Bakeat 350°F (175°C) for 10 minutes.
  • Meanwhile, combine softened cream cheeseand 1/2 cup sugar; mixing at medium speed with an electric mixeruntil well blended. Add eggs, one at a time, mixing well aftereach addition. Blend in vanilla and pour over the crust.
  • Toss thinly sliced apples with the 1/3cup sugar and remaining cinnamon. Pour the apple mixture overthe cream cheese layer and sprinkle with chopped pecans.
  • Bake at 350°F (175°C) for 1 hourand 10 minutes. Loosen the cake from the rim of the pan; coolbefore removing from the pan. Chill.

    Makes 12 servings.

    I made this for thanksgiving this year and it was a hit! My family has asked since then if I would be making it for Christmas! Thanks so much for this wonderful recipe! We absolutely love this cheesecake! My husband loves pecan pie and cheesecake but developed a nut allergy as an adult. Any suggestions for a crunchy texture and nutty flavor for the pecans??
