Peanutty Rocky Road recipe

A super easy, super yummy chocolate candybursting with mini marshmallows and roasted peanuts.

Recipe: Peanutty Rocky Road

1 (12-ounce) package semisweet chocolatechips (2 cups)
1 (6-ounce) package milk chocolate chips (1 cup)
1 (14-ounce) can sweetened condensed milk (not evaporated milk)
2 teaspoons vanilla extract
Dash salt
1/2 cup chopped dry roasted peanuts
1 1/2 cups miniature marshmallows

  • Line 8-inch square pan with foil, extendingfoil over edges of pan.
  • In a large microwave-safe bowl, combinesemisweet and milk chocolate chips and microwave at HIGH (100%)1 1/2 minutes; stir. If necessary, microwave at HIGH an additional30 seconds at a time, stirring each time, just until chips aremelted when stirred.
  • Stir in sweetened condensed milk, vanillaand salt; blend well.
  • Fold in chopped peanuts and marshmallows.
  • Spread mixture into prepared pan.
  • Refrigerate until firm. Lift candy outof pan and peel off foil. Cut candy into squares.

    Makes about 60 squares.
