You don’t have to be a peanut butter loverto love this exceptional spritz cookie.
Recipe: Peanut Butter Spritz
3 1/2 cups all-purpose flour1 teaspoon baking powder1 teaspoon baking soda1 teaspoon salt1 cup creamy peanut butter1 cup butter or margarine, softened1 cup granulated sugar1 cup firmly packed brown sugar2 large eggs1 teaspoon vanilla extract
In a medium bowl whisk together the flour,baking powder, baking soda and salt; set aside.
In a mixing bowl, using an electric mixerat medium speed, cream together the peanut butter, butter andboth sugars until light and fluffy. Add egg and vanilla blendingwell. Stir in flour mixture until well blended
Shape dough into 3 rolls to fit cookiegun; cover and chill for at least 1 hour.
Preheat oven to 350°F (175°C).
Use cookie gun to shape dough as desired,following manufacturer’s instructions. Place on ungreased bakingsheets about 2-inches apart.
Bake for 8 to 10 minutes or until lightlybrowned. Transfer to wire racks tocool completely.
Makes 12 to 14 dozen.
