Peanut Butter Brownies recipe

Chewy chocolate brownies with a creamypeanut butter frosting.

Recipe: Peanut Butter Brownies

1/4 cup vegetable shortening
1/2 cup butter or margarine
1 cup granulated sugar
1 cup firmly packed brown sugar
3 large eggs
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
3/4 cup unsweetened cocoa
1/2 teaspoon salt
1 1/4 cups chunky peanut butter
1 cup sifted powdered sugar

  • Microwave shortening and butter in a 2-quartmicrowave-safe bowl at HIGH 35 seconds. Stir until well blended.Stir in sugars until well blended. Add eggs and vanilla, stirringwell.
  • Combine flour, cocoa, and salt. Stir intobutter mixture until well blended. Spread batter into a lightlygreased 13 x 9 x 2-inch pan.
  • Bake at 325°F (160°C) for 30 minutes.
  • Microwave chunky peanut butter in a microwave-safebowl at MEDIUM (50% power) 2 minutes or until peanut butter melts,stirring after 1 minute. Stir in powdered sugar; spread overwarm brownies.

    Makes 4 dozen.
