You get double the peanut flavor with thiscrunchy peanut brittle.
Recipe: Peanut Brittle withPeanut Butter Chips
1 (10-ounce) package peanut butter chips- divided use
Butter 15 1/2 x 10 1/2 x 1-inch jellyroll pan.
Sprinkle 1 cup peanut butter chips evenlyonto bottom of prepared pan; set aside.
In a heavy 2 1/2-quart saucepan melt butter;stir in sugar, corn syrup and water. Cook over medium heat, stirringconstantly until mixture reaches 300°F (150°C) on candythermometer; about 30 to 35 minutes.
Remove from heat and immediately spreadmixture into prepared pan. Sprinkle with remaining 2/3 cup peanutbutter chips. Cool completely.
Remove from pan. Break into pieces. Storein tightly covered container in cool, dry place.
1 1/2 cups butter
1 3/4 cups granulated sugar
3 tablespoons light corn syrup
3 tablespoons water
Makes about 2 pounds brittle.
