Homemade peanut brittle is a family favorite.Try substituting your favorite nuts for a different flavor.
Recipe: Peanut Brittle
2 cups granulated sugar
Coat a baking sheet with oil; set aside.
In a 3-quart heavy-bottomed saucepan overhigh heat, cook sugar, water and cream of tartar until mixturereaches a medium caramel color. Brush down the sides of the panwith a pastry brush dipped in warm water 2 times, to preventthe sugar from crystallizing. Add peanuts and stir with a woodenspoon to coat completely with caramel.
Remove pan from heat and quickly pourmixture onto prepared baking sheet. Working quickly, spread mixturethinly with the back of a wooden spoon. Let peanut brittle coolcompletely (about 30 minutes), then break into pieces. Storein a tighlty covered container.
1/2 cup water
1/2 teaspoon cream of tartar
2 cups roasted salted peanuts
Makes 10 servings.
