Peachy-Creamy Oatmeal recipe

Peachiest, creamiest bowl of oatmeal ever,topped with a crunchy nutty sprinkle.

Recipe: Peachy-Creamy Oatmeal

Nutty Sprinkle:
1/4 cup toasted nuts
2 tablespoons brown sugar, firmly packed
1/4 teaspoon ground cinnamon
3 cups milk
1 1/2 teaspoons ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
2 cups old fashioned oats
1 1/4 cups peeled and chopped peaches**
1 (8-ounce) container vanilla yogurt

  • For Nutty Sprinkle: In a small bowl, combinenuts, brown sugar and cinnamon; set aside.
  • For Oatmeal: In a medium saucepan, bringmilk, cinnamon, salt and nutmeg to a boil (watch carefully);stir in oats. Return to a boil; reduce heat to medium and cookfor 5 minutes, stirring occasionally.
  • Stir in peaches and cook until peachesare heated through and most of liquid is absorbed, about 1 minute.
  • Spoon oatmeal into four cereal bowls.Top with yogurt and Nutty Sprinkle.

    Makes 4 servings.

    *To toastnuts, spread evenly in shallow baking pan. Bake at 350°F(175°C) 5 to 8 minutes or until deep golden brown.

    **Or use frozen peaches, thawed and chopped,or 1 (14 to 16-ounce) can of peaches, drained and chopped.
