Peach Muesli recipe

Muesli was introduced around 1900 by theSwiss physician Maximilian Bircher-Benner for patients in hishospital, where a diet rich in fresh fruit and vegetables wasan essential part of therapy. Traditional muesli was eaten withorange juice and not milk.

Recipe: Peach Muesli

2 cups steel-cut oats (also called Irishoatmeal, Scotch oats)
2 cups fresh or frozen peaches, peeled and coarsely chopped (ifusing frozen, thaw)
1 1/2 cups apple juice
1 (8-ounce) carton vanilla or peach yogurt
1 teaspoon vanilla extract
Fresh or frozen (thawed) blueberries or raspberries for garnish(optional)

  • Combine all ingredients, except berriesin a large bowl and mix well. Cover and refrigerate for 8 hoursor overnight.
  • Serve muesli cold, topped with berries,if desired.
  • Store muesli covered in refrigerator for3 to 4 days.

    Makes 4 servings.
