Pawpaw Zabaglione recipe

Pawpaw is an indigenous fruit to the U.S.,its taste is similar to banana. It has many nicknames, including’Kentucky banana’, ‘banango’, ‘prairie banana’ and ‘poor man’sbanana’.

Recipe: Pawpaw Zabaglione

6 large egg yolks1/4 cup granulated sugar1/4 cup passion fruit liqueur1 cup pureed pawpaw pulp1 cup whipping cream

  • Over a simmering double boiler, combineegg yolks and sugar.
  • Meanwhile, heat the liqueur until warm(too much heat will cause it to ignite). Add the warmed liqueurto the egg yolk and sugar mixture. Continue to cook, stirringconstantly, until thickened.
  • Allow to cool and fold in the pawpaw puree.
  • Whip cream into stiff peaks and fold itinto the pawpaw and egg yolk mixture. Serve chilled in stemmedglasses.
