An Italian pasta salad with fresh basil,cherry tomatoes and peas.

Recipe: Pasta Salad withBasil, Tomatoes and Peas

1/3 cup white wine vinegar2 tablespoons water2 teaspoons kosher or sea salt1/2 teaspoon granulated sugar1/2 teaspoon dried tarragon, crumbled2 garlic cloves, mashed to paste with1/4 teaspoon saltFreshly ground black pepper to taste1/2 cup extra virgin olive oil1 pound medium pasta shells, cooked accordingto package, rinsed in cold water1 1/2 cups frozen peas, cooked until justtender and cooled2 pints cherry tomatoes, halved1/2 cup chopped fresh basil leaves, packed

  • In a large bowl whisk together the vinegar,water, salt, sugar, tarragon, garlicpaste and pepper; add the oil in a stream, whisking dressinguntil it is emulsified.
  • Add cooked pasta and toss with dressing;add peas, tomatoes, and basil. Tossto mix and serve.

    Serves 10 to 12.

    And we aren t going to let the holiday pass us by without some good food. I am making one of my favorite pasta salads today-Arugula Pasta Salad. Arugula is one of my favorites such a yummy distinct taste. Love how simple and easy this salad is. It would be perfect for a busy weeknight meal. Do you like it better served warm or cold?
