These fun cookie bars have a jelly centerwith peanut butter chips and a crumb topping. The kids will lovethem…and so will you!
Recipe: P. B. Chips and JellyBars
1 1/2 cups all-purpose flour
Heat oven to 375°F (175°C). Grease9-inch square baking pan; set aside.
Stir together flour, sugar and bakingpowder; cut in butter with pastry blender or fork until mixtureresembles coarse crumbs. Stir in beaten egg until blended.
Reserve 1 cup mixture; press remainingmixture onto bottom of prepared pan.
Stir jelly to soften; spread evenly overcrust. Sprinkle 1 cup peanut butter chips over jelly.
Stir remaining 2/3 cup chips into reservedcrumb mixture; sprinkle over top.
Bake 25 to 30 minutes or until lightlybrowned. Cool completely in pan on wire rack. Cut into bars.
1/2 cup granulated sugar
3/4 teaspoon baking powder
1/2 cup butter
1 large egg, beaten
3/4 cup grape jelly (or your favorite flavor)
1 (10-ounce) package peanut butter chips – divided use
Makes about 16 bars.
