Overnight French Toast recipe

An orange-scented French toast breakfastcasserole topped with crunchy pecans.

Recipe: Overnight FrenchToast

4 large eggs
2/3 cup orange juice
1/3 cup milk
1/4 cup granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon ground nutmeg
12 slices of day-old French bread
1/3 cup butter, melted
1 tablespoon finely grated orange peel
1/2 cup chopped pecans

  • In a medium bowl, beat together eggs,orange juice, milk, sugar, vanilla and nutmeg. Place bread slicesin a 13 x 9 x 2-inch pan, overlapping if necessary. Pour eggmixture evenly over the top, cover and refrigerate overnight.
  • Preheat oven to 400°F (205°C).
  • Brush a large baking sheet with meltedbutter, then arrange bread slices on top in a single layer. Sprinklewith pecans and orange zest. Bake until golden brown, about 20to 25 minutes. Serve immediately.

    Makes 6 servings.
