Ortega Steak Fajita Stuffed Peppers recipe

For a super-easy twist on traditional stuffedpeppers, fill pepper cups with ready-made Ortega Steak Fajitasand top with a dollop of sour cream.

Recipe: Ortega Steak FajitaStuffed Peppers

1 (24-ounce) package ORTEGA® FrozenSteak Fajita, prepared according to package directions, kepthot
4 red, green or yellow bell peppers
1/4 cup low fat sour cream

  • Cut stem end off peppers; remove seeds.Heat water in 4-quart saucepan to a gentle boil
  • Cook peppers for 5 minutes; drain. Fillpeppers with fajita mixture; top each with sour cream.

    Thanks, girlyfriend! I man handled about a half dozen of them before the plate became top heavy and slipped off of the TV table next to my desk. Danged gravity! Steak Fajita Bell Pepper Sliders, anyone??  They re perfect low carb appetizers or a game day snack, and they make a great lunch or light dinner, too!
