Orange Yogurt Muffins recipe

A wonderful lowfat muffin with a hint oforange flavor. Perfect for breakfast on the run!

Recipe: Orange Yogurt Muffins

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
2 large eggs
1/4 cup SPLENDA® No Calorie Sweetener, Granulated
2 tablespoons canola oil
1 cup plain low-fat yogurt
2 teaspoons vanilla extract
1 teaspoon freshly grated orange peel

  • Preheat oven to 350°F (175°C).Place paper baking cups in muffin pans, and coat with vegetablecooking spray.
  • Combine flour, baking powder, soda andsalt; set aside.
  • Beat eggs and SPLENDA® GranulatedSweetener at high speed with an electric mixer for 5 minutes.Add oil, yogurt, vanilla, and orange peel; beat at medium speeduntil blended, about 1 minute. Add dry ingredients; beat at lowspeed until blended. Spoon mixture into prepared muffin pans;filling 3/4 full.
  • Bake for 15 minutes or until cake testerinserted in center comes out clean. Remove from pans immediatelyand cool on wire rack.

    Makes 8 muffins.
