Fruit salsa is a tasty side to your holidayham. With any leftovers add more sliced orange, kiwi, and slicedbanana and make into a fruit salad for the next day’s lunch.
Recipe: Orange-Mint Salsa
2 oranges, peeled, seeded and chopped
3 kiwi fruit, peeled and finely chopped
1/4 cup snipped fresh mint
1/4 cup minced red onion
1 teaspoon grated orange zest
Salt, to taste
Makes 1 1/2 cups.
