Orange Granola Cookies recipe

Honey adds a softer sweetness to thesechewy cookies while oatmeal, sunflower seeds and raisins givethem plenty of texture.

Recipe: Orange Granola Cookies

2 cups all-purpose flour
2 1/2 teaspoons baking powder
1 1/2 teaspoons ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cloves
1/2 cup butter, softened
1/2 cup sugar
1 large egg
1/3 cup orange juice concentrate, thawed
1/2 cup honey
1 cup raisins
1 cup quick cooking oatmeal
1/2 cup sunflower seeds, shelled

  • Preheat oven to 350°F (175°C).Lightly grease a baking sheet.
  • Stir together flour, baking powder, cinnamon,baking soda, salt and cloves; set aside.
  • In a large mixing bowl, cream butter andsugar until light and fluffy. Beat in egg. Alternately stir inflour mixture, orange juice concentrate and honey until blended.Stir in raisins, oatmeal, and sunflower seeds.
  • Drop by tablespoonfuls 2-inches apartonto prepared baking sheet. Bake 15 to 20 minutes or until lightlybrowned. Transfer to a wire rack to cool.

    Makes 36 cookies.
