Orange Glazed Carrots recipe

Simply delicious! Tender carrots bakedin a thick, buttery orange sauce.

Recipe: Orange Glazed Carrots

6 to 8 fresh carrots
1/4 cup butter
2 tablespoons granulated sugar
2 tablespoons brown sugar, packed
1 tablespoon all-purpose flour
2/3 cup fresh orange juice

  • Peel carrots and cut into 1-inch lengthwisepieces. Cook until barely tender. Transfer to shallow bakingdish.
  • In a small saucepan, melt butter. Stirin sugars and flour. Gradually add orange juice. Cook over medium-highheat, stirring constantly, until mixture boils. Pour over carrots,stirring gently. (May be made ahead up to this point and refrigerated.)
  • Bake at 350°F (175°C) for 30 minutes.

    Makes 6 servings.

    Trim the carrots and cook in boiling water for 4-6 mins until just tender, then drain. Melt the butter in a large frying pan, add the drained carrots, then fry over a high heat for 1 min. Pour over the orange juice and cook for a further 2-3 mins, bubbling the sauce and stirring to thoroughly coat the carrots. Finally, stir in the chopped parsley and serve.
